1 tbsp coconut sugar
1/2 tsp baking powder
1/4 tsp cinnamon
Pinch of nutmeg
1/4 cup plant-based milk
1 tbsp neutral oil
1/2 tsp vanilla extract
1/2 small apple, peeled & diced

Method

1 In a small bowl, combine the flour, protein, sugar, baking powder, cinnamon and nutmeg. Mix well.
2 Add in the plant-based milk, oil and vanilla extract and mix until smooth.
3 Fold through the diced apples, saving a few to add on top.
4 Transfer into a mug and top with the remaining diced apples plus a sprinkle of cinnamon.
5 Microwave for 1-2 minutes, depending on your microwave. Start with 1 minute and check for readiness and cook for an additional 20-30 seconds if needed. Enjoy.
